We are often asked if we are 100% raw? I have just returned from my Friday wheatgrass deliveries and I am sitting having a piece of chocolate cake and a glass of milk. OK, the “milk” is made from raw, organic almonds and the cake is also raw- except for a bit of maple syrup (organic and Canadian, but it’s not raw). So I have to answer “close- but not 100%”

The question, “Are you 100% raw?” might be compared to being asked, “Are you saved?” Could we actually be trying to answer, “Who’s the most righteous?”

When Chris and I became raw food advocates, the two questions that were foremost in our minds were “ How long do we want to live?” and “What will the quality of our lives be?” We didn’t consider being 100% RAW when we weren’t even 100% vegan.  We were looking for results, not a competition.

We believe that the real questions that should be asked are not your “raw food score,” but what are your pulse rate, blood pressure, and overall physical wellbeing, and when was the last time that you needed to see a doctor.

Deciding how “RAW” you want to be depends upon how much you are willing to give up or take on, not whether you can achieve a perfect score of 100%.

Remember that it is your life and the decisions you make must come from you. Taking control of what you eat and why you eat are more important than being 100% raw.

Wake up calls come in many different forms. Sometimes they are in the form of a blunt or abrasive warning such as a life threatening diagnosis that confronts our very existence and suggests a radical intervention is in order. In some instances the awakening is more subtle and arrives as an ‘a-ha’ moment or spiritual revelation. Temporary physical impairments such as a sprained ankle, slipped disc or tendonitis do wonders for us by slowing us down and inviting us to learn new ways of maneuvering through life. And then there is the emotional catharsis which quite often can be the end result of all the other physical wake up calls that have literally been beating us up but can be the hardest to let go of. However, if we open ourselves up to the possibility, we can free ourselves from the emotional bondage of old patterns and explore new ways of living.

There is that moment of freefall as we let go of one way of living while adopting a new approach to living life. There is an absolute fear of losing control, while in effect; we are gaining control of our lives. Why else would we have paid attention to the wake up call in the first place?

Recipe of the month:

Gazpacho
From The Raw Food Revolution Diet, by Cherie Soria, Brenda Davis, RD, and Vesanto Melina, MS, RD
Yield:  2 cups/500 mL (2 servings)

Traditionally served either chilled or at room temperature, gazpacho makes great use of the last perfectly ripe tomatoes from your summer garden. This is a simple soup full of refreshing good flavor.
 
Nutrition Note
One serving of this soup supplies over 30% of the RDA for chromium, copper, magnesium, manganese, molybdenum, and vitamins B6, C, and K, and over 20% of the RDA for Pantothenic acid, potassium, and vitamins A and E.

3 ripe tomatoes
1/4 cup (60 mL) diced celery
1/4 cup (60 mL) seeded and diced cucumber
3 tablespoons (45 mL) diced red bell pepper
2 teaspoons (10 mL) freshly squeezed lemon juice
1/4 cup (60 mL) thinly sliced radishes
2 tablespoons (30 mL) minced fresh parsley, packed
1 tablespoon (15 mL) thinly sliced green onion
1 1/2 teaspoons (7 mL) extra-virgin olive oil
1/2 teaspoon (2 mL) salt
Pinch of cayenne
Freshly ground black pepper
1/2 ripe avocado, diced
2 tablespoons (30 mL) Savory Seasoned Sunflower or Pumpkin Seeds

  1. Seed the tomatoes and strain the seeds from the juice through a cloth mesh bag. Set the juice aside.
  2. Finely dice the tomatoes.
  3. Place the tomato juice, half of the celery, cucumber, and bell pepper, and all of the lemon juice in a blender and process until smooth.
  4. Pour into a bowl and stir in the tomatoes, the remaining celery, cucumber, and bell pepper, and all of the radishes, parsley, green onion, oil, salt, cayenne, and black pepper. Chill in the refrigerator for at least 1 hour before serving.
  5. Just before serving, stir in the avocado, pour into individual bowls, and top with the optional pumpkin seeds.
  6. Stored in a sealed glass jar in the refrigerator, Gazpacho will keep for up to 2 days.

Sweet Onions

The health benefits of onions are endless because of their powerful anti-septic and anti-bacterial properties. The onion is rich in vitamins A, B and C and is a potent source of folic acid, calcium, phosphorus, magnesium, chromium, iron and dietary fiber. 

Selecting Onions
Sweet onions have a thinner, lighter color skin than storage onions and tend to be more fragile. Signs in produce sections usually differentiate between sweet onions and storage onions. Another indication is price - sweet onions are a premium product that can range anywhere from $2 a pound and up.

Sweet onions are high in water and sugar content so they require more care when storing; treat them gently to avoid bruising. Store away from potatoes because they'll absorb water. Generally, sweet onions will keep for 4-6 weeks or longer. Cut onions should be wrapped tightly in plastic wrap and refrigerated. 

Our favourite ways to store sweet onions:
In the refrigerator: Store in a single layer in the vegetable bin on paper towels. For longer storage, wrap in foil.
On racks or screens: Place on elevated racks or screens, not touching, in a cool area.

In the freezer: For long-term storage, sweet onions can be frozen, but their texture changes so frozen onions should be used only for cooking. Chop and place on a cookie sheet and place in the freezer. When frozen, place in freezer containers or bags. To store whole onions, peel, wash, core and freeze in a freezer-proof container or bag.

In pantyhose or nylons: Take a leg from a pair of clean, sheer pantyhose, drop an onion into the foot, tie a knot and repeat as necessary. Hang in a cool, dry, well-ventilated area. Cut above the knot when ready to use.

Nutritive Values of Onions: Per 100 gm. (There is considerable variation in composition between different varieties and the stage of maturity and the length of storage.)

    Riboflavin B2 0.027 mg (2%)
    Niacin B3 0.116 mg (1%)
    B6 0.12 mg (9%)
    Foliate B9 19 μg (5%)
Vitamin C: 9 mg.
Calcium: 32 mg.
Phosphorus: 44 mg.
Potassium: 300 mg.
Carbohydrates: 10.3 gm.
Protein: 1.4 mg.
Calories: 45

Some of the Health Benefits of Onions:

Ancient records reveal that onions have been used as far back as 4000 B.C. as a cure-all for many illnesses.  In WW II, the vapors of onion paste were used to reduce the pain and accelerated the healing of soldiers' wounds.

Anemia:  The high content of iron in onion makes it beneficial for the treatment of anemia.

Anti-coagulant:  Just by eating half a medium raw onion daily can significantly lower cholesterol and help prevent heart attacks.

Anti-inflammatory:  The anti-inflammatory agents in onion are useful in reducing the symptoms of inflammatory conditions such as arthritis and gout.

Anti-septic:  Fights infection bacteria, including E.coli and salmonella, and is effective against tuberculosis and infections of the urinary tract, such as cystitis.

Blood pressure:  Whether you eat it raw or cooked, onions help to lower blood pressure naturally.  It also thins the blood, dissolves blood clots and clears the blood of unhealthy fats.

Cholesterol:  Eating half a medium raw onion daily significantly helps to correct thrombosis, lower the LDL cholesterol and prevents heart attacks.

Colon cancer, prevention:  Fructo-oligosaccharides in onions stimulate the growth of good bacteria in the colon and help reduce the risk of tumors developing in the colon.

Constipation and flatulence:  Add plenty of onion in your cooking to help relieve chronic constipation and flatulence.

Diabetes:  Chromium in onion helps diabetics' cells respond appropriately to bringing down the insulin level and improve glucose tolerance.

Diuretic and blood cleansing:  Help counter fluid retention, urinary gravel, arthritis and gout.

Ear disorder:  In some culture, cotton wool is dipped into onion juice and put into the ear to stop ringing in the ear.

Hair lossA study has shown that applying onion juice on scalp twice a week for 2 months will cause hair regrowth. Definitely costs much less than some hair tonics.

Immune booster:  The pungency increases blood circulation and causes sweating.  Useful in cold weather to ward off infection, reduce fever and sweat out colds and flu.

Osteoporosis:  A compound has recently been identified in onions that prevents the activities of breaking down bone. Especially beneficial for women who are at risk for osteoporosis as they go through menopause.

Respiratory:  Mix equal amounts of onion juice and honey and take 3-4 teaspoons of this mixture daily.  It helps liquefy mucus and prevents its further formation.  It is also one of the best preventive potions against common cold.

Sexual debility:  Onion is a potent aphrodisiac and stands second only to garlic.  For this, the white variety is most effective.

Urinary tract infection:  Boil some onion in water till half of the water evaporated.  Sieve the onion water, leave to cool and drink.  The anti-bacterial properties help to relieve the burning sensation in urination.
